Creamy Poached Chicken Filling
Ingredients
2 Poached Chicken Breasts (use recipe above)
4 Celery Stalks, finely diced
2 cups Baby Spinach Leaves, finely diced
4 tbsp Homemade Mayonnaise (use recipe above)
Method
In a large glass container shred up your chicken using 2 forks.
Add the diced celery and spinach as well as the mayonnaise. Season with salt and pepper and stir until well combined.
Use in salads or as a filling in sandwiches and wraps. Store in the fridge for 3 days.
