Creamy Poached Chicken Filling

 
Ingredients
  • 2 Poached Chicken Breasts (use recipe above)

  • 4 Celery Stalks, finely diced

  • 2 cups Baby Spinach Leaves, finely diced

  • 4 tbsp Homemade Mayonnaise (use recipe above)

Method
  1. In a large glass container shred up your chicken using 2 forks.

  2. Add the diced celery and spinach as well as the mayonnaise. Season with salt and pepper and stir until well combined.

  3. Use in salads or as a filling in sandwiches and wraps. Store in the fridge for 3 days.
